About Shauna
Shauna is a Family Nurse Practitioner with a special interest in autoimmune disorders, gut health, and hormone optimization. She graduated from Frontier Nursing University with her Master of Science in Nursing in 2023. She completed her undergraduate Nursing degree at Arizona State University and worked as a Registered Nurse for 7 years in post-surgical orthopedics and adolescent behavioral health in Arizona.
Shauna grew up in sunny Gilbert, AZ. She has been married for 15 years and has 4 children and 2 dogs. Her family moved to Utah 8 years ago and enjoys having all 4 seasons of the year! Shauna loves to travel and explore other countries. She’s been able to combine her love for traveling with her love for helping others by participating in humanitarian projects in Romania, Thailand, and Mexico City over the last few years.
Shauna brings her passion for health and wellness to her patients at Optimal Health. She believes in building strong relationships with her patients and empowering them to take control of their health and well-being. She’s committed to providing compassionate, personalized care that addresses the unique needs of each individual and family she serves.

About Connie
Connie Taylor has been a Family Nurse Practitioner for over 10 years. She completed her undergraduate and graduate degrees in Nursing from BYU. Her nursing background consisted primarily of acute care in a hospital setting on the cardiac floor and step down units. Since becoming an NP, she has worked in a family practice/functional medicine setting. She has extensive experience in hormones, thyroid health, cardio-metabolic health, weight management, autoimmune conditions, gut health, lifestyle, and wellness.
Connie grew up in southern California. She has been married for 16 years and has 3 children! Her favorite thing is her family. She also enjoys lifting weights/exercising, gardening, spending time in the outdoors, and being home with her family!
Connie likes being able to incorporate integrative and functional medicine practices into healthcare and hopes you will find the care you need here!

Elizabeth Daniels

About Elizabeth
Elizabeth is a Family Nurse Practitioner with a focus on lifestyle medicine, functional medicine, and hormones. She graduated from BYU with a master’s degree in Nursing in 2011. She has worked in family practice as well as functional medicine since graduation. She completed her undergraduate nursing degree from Weber State University and worked as an RN in surgical services on the surgical floor, in the operating room, and in the recovery room from 2003 – 2011.
She enjoys helping people feel their best by optimizing hormones and working to improve health by getting to the root cause of their symptoms.
Elizabeth grew up in Utah. When she is not working, she enjoys spending time with her husband Tyler and their 6 children. She enjoys camping in the beautiful Utah mountains, vacationing anywhere warm, and reading.

Sara Maestas

About Sara
Sara Maestas is a Family Nurse Practitioner who graduated from Westminster College in Salt Lake City, Utah. She completed her undergraduate Nursing degree at the University of Utah. She worked as a Registered Nurse for 7 years at the University of Utah Hospitals and Clinics, in Urgent Care and inpatient acute care, as well as at Huntsman Cancer Institute.
One of her favorite things about her work is seeing the positive life changes that individuals have as a result of optimizing their health.
She does this better by balancing their hormones and by working to treat the root cause of symptoms.
She loves spending time with her son, cats, and her friends. Her interests include: Live music, podcasts, books, self work, meditation, beauty, good food, and fitness.

Julia Knaphus

About Julia
Julia Knaphus has been a Family Nurse Practitioner since 2018. Julia earned her Master’s Degree from the University of Cincinnati and undergraduate degree from Weber State University. She has worked as an RN and APRN at the Utah State Hospital. Julia enjoys science and loves exploring new, interesting, alternative, and emerging medical technologies. She also enjoys seeking and learning about different therapies and procedures that will help her patients feel their best.
Julia grew up in a military family and moved all over the United States. She has made beautiful Utah her home and loves it here. Julia has been married to her loving and supportive husband for 25 years. They share four wonderful adult children. Before nursing, Julia and her husband, Steve, were foster parents for 11 years to many amazing kids. Her passions include quality time with her husband and children, organization, decorating, thrift shopping, being outdoors, and continuing to learn.

Coreen McClellan

About Coreen
Coreen McClellan is a family nurse practitioner focusing on holistic health and wellness. She specializes in endocrine concerns, including thyroid, diabetes, women’s and men’s hormones, and cardiac and gut health. She listens thoughtfully to her patients and works hard to help them achieve optimal health.
She finished her undergraduate nursing degree at the University of Denver’s Anschutz Medical Campus, after which she worked as a cardiac nurse in Bismarck, North Dakota. While in North Dakota, she earned a master’s degree in Nursing Education and a PhD in Clinical Nursing Practice. Furthermore, she has served as an adjunct clinical nursing faculty member at BYU and as a primary care provider.
Coreen and her husband, Robert, have five children, seven grandchildren, and 23 chickens. She enjoys gardening, hiking, yoga, and spending time with her family.

Katie Hymas

About Katie
Katie Hymas is a Family Nurse Practitioner with more than 20 years of experience in healthcare. She began her career as a registered nurse, gaining extensive experience in a variety of hospital settings, including medical-surgical, telemetry, operating room, intensive care, and post-anesthesia care.
After years of caring for patients at the bedside, Katie pursued her graduate education at Western Governors University and became a Family Nurse Practitioner. Her diverse clinical background has given her a broad perspective on health and wellness and a deep appreciation for treating each patient as a whole person.
As an integrative health practitioner, Katie is passionate about helping patients understand and take an active role in their health. Her goal is to look beyond symptoms and address the underlying factors that influence how a person feels and functions. She strives to partner with each patient to create individualized, evidence-informed plans that support long-term health and an improved quality of life.
Outside of the clinic, Katie enjoys spending time with her family and taking advantage of the outdoors. She loves hiking, biking, boating, and skiing.
Katie’s goal is simple: to help her patients feel their best so they can show up fully and confidently in the people and activities that matter most to them.

Claudia is a Master Aesthetician who graduated from The Skin Institute in 2023. She specializes in results-driven treatments. Some of her favorites include BroadBand Light Laser, dermaplaning, and brow services. She is very detail oriented and makes sure you leave with the best results possible while maintaining safety precautions.
Professionally trained in GlyMed Plus skincare and advanced laser technology, Claudia is dedicated to delivering consistent, visible results while prioritizing skin health and safety. Her treatment philosophy focuses on gentle exfoliation and intense hydration.
Born and raised in Las Vegas, Nevada, she relocated to Utah to pursue opportunities within its thriving beauty industry. Claudia is passionate about helping clients age gracefully and believes confidence begins with feeling comfortable in your own skin.
Outside of the treatment room, she enjoys snowboarding, shopping, doing makeup, and watching movies, interests that continue to fuel her creativity and love for beauty.

Practice Manager
Liz Rosenbaum is the Practice Manager at Optimal Health Family Practice and Med Spa. She holds a degree in Healthcare Management from Western Governors University and has been an integral part of the clinic since 2017. With a long-standing interest in health and wellness, Liz values being part of a team that focuses on healing through functional medicine.
A native of Spanish Fork, Utah, Liz enjoys spending time with her two adult children. In her free time, she loves traveling, staying active, exploring the outdoors, and getting lost in a good book.
